Pizza dough is something that everyone should be able to make. Get the idea out of your head that it’s difficult, or that you need some kind of special Italian blood to be able to do it. It’s easy, all you need are your hands and a little bit of effort! It’s cheap to make and a home-made pizza dough is guaranteed to taste better than a takeaway with a little bit of practice.
This recipe came about because no matter how hard I tried, I could not get an authentic tasting pizza dough. I tried so many and they just came out like bread with a topping on. Something was missing so I experimented for about 2 years to bring you this perfect pizza dough.
The secret to a great tasting dough has to be the oil that you use. I finally settled on a mixture of extra virgin olive oil and sunflower oil. I also use a combination of strong bread flour and finely ground semolina or polenta. Sometimes I use a semolina and polenta mix, just to shake it up a little bit! Both work equally well and give some extra texture and bite to the dough. It also makes the base perfectly crunchy!
