The Winter is most definitely setting in. Foggy mornings and dark nights call for comfort foods that warm your soul. It’s time to bust out the blender and get making some soup. This chicken leek mushroom soup is so very easy to make and thanks to my trusty blender, it’s ready to eat in just 30 minutes! Jam packed full of goodness and without exerting any real effort at all. The chopping can even be done in the blender to make it even easier! Just remember not to chop the veg too finely or it will end up a soggy, over cooked mush very quickly.
This chicken leek mushroom soup is thick, creamy and very delicious. To really give it something extra, I topped it with some SnackingHam from Serious Pig and served it with some chunks of bread. The flavour combination was awesome. With the addition of the SnackingHam, it really gave an extra dimension to both the taste and the texture of the soup. I ended up eating the whole bag of SnackingHam in my soup in favour of the croutons. It made a nice change and I really enjoyed it – so did Misteright and The Boy. Chicken leek mushroom soup is fabulous for a light lunch and can easily be poured into a flask or a soup container and enjoyed at work, or at home on a cold day.
