This is possibly the easiest chicken korma to make from scratch in the world. It’s so easy to make and tastes delicious. It’s also dairy free and ready to eat in less than 30 minutes! This chicken korma is creamy and luscious. I was recently sent a wonderful package from Alpro who produce a wide range of dairy free alternatives. It contained some of their new coconut cuisine which is a coconut based alternative to cream for me to use in a recipe. It’s really delicious and great to use if you are on a clean eating, Paleo or vegan diet. Alpro coconut cuisine is a really handy ingredient for curry in a hurry! The carton was quite small but contained enough to make a meal for 4 people which left me pleasantly surprised as I honestly didn’t think there would be enough! Coconut cuisine pours well and has a thicker consistency than coconut milk (which I normally use in my curry dishes) It has a pleasing coconut flavour which is milk enough for the flavour to be noticed but not so strong that the coconut is over-powering.This is quite possibly the simplest korma I’ve ever made and it certainly does not require much effort at all. I served the chicken korma with jewelled rice (it’s just added pomegranate seeds & some chopped mint along with some thin slices of green and red chilli) some cucumber & mint dip and a stack of poppadoms.
