I have to admit, I’m not a massive fan of soup unless I’m sick with the flu and then the chicken soup comes out in force but since the cold weather is approaching faster than anyone would like for August, it made sense to give a boring old soup a brand new makeover. It’s also Caribbean food week so I thought I would spice it up a bit and give a Creole twist to a classic chicken soup.
This soup is filled with loads of goodness and uses up any leftover roast chicken and mash from a Sunday feast! There’s 3 of your 5 a day in there too so it’s really good for you and if you use homemade chicken stock it’s suitable for a gluten free, paleo or clean eating lifestyle. It’s really simple to make and is ready to eat in about half an hour. Creole chicken sunshine soup is best served piping hot with huge chunks of crusty bread for dipping & mopping. Perfect for a cold, rainy day and it’s bound to bring a bit of Caribbean sunshine into your life (at least until the bowl is empty anyway!)
