Drizzle cake is one of my all time favourite picnic cakes. They’re moist, soft and delicious but a lemon drizzle cake can be a bit boring after a while. It got me thinking what other flavours of drizzle cake I could make that would be loved by everyone who eats them. I made some ginger syrup last week for some cocktails I’d be playing with and I had quite a lot left over so I decided that I’d try making a ginger drizzle cake. I used the same basic principles of a lemon drizzle cake but the ginger syrup is much more sticky than a lemon one. This recipe calls for my delicious ginger simple syrup which is made using ginger coconut sugar from CocoNom (the same as in this drizzle cake) making the whole recipe free from any refined sugars.
