Mocha Walnut Brownies came about after an epic brownie and blondie baking session this week. It happened after Misteright and I were invited to taste test the amazing coffees from local coffee roasting company Hope & Glory it was bound to be interesting! We discovered lots of amazing things about coffee and how best to brew it. All the coffee got me thinking about what’s the best accompaniment for a cup of coffee. After asking about a bit, the general opinion amongst friends seemed to be brownies. They are sold at most coffee outlets as well as being really delicious! The coffee beans also got me thinking about baking with whole and ground beans instead of just using cold coffee. Whole beans would give an added crunch and coffee grounds would really add some deep coffee flavour to whatever they were baked into.
I love double chocolate brownies so I decided to use them as a base. Since coffee and walnuts are a great flavour combination I decided to add some chunks of walnuts into the mix as well as a few grams of ground coffee and a few grams of whole beans with a few cacao nibs for good measure. To make these brownies, I used the amazing Blenheim Espresso Blend #One for the ground and whole beans. It would work with any coffee beans but this blend is one of our favourites. I honestly believe that these are my most delicious brownies yet!
