It’s no secret, I love a good chocolate brownie but my ultimate favourite has to be peanut butter salted caramel swirl brownies. A rich, delicious gooey double chocolate brownie with swirls of smooth peanut butter and salty caramel in each luscious bite. They taste so good that it’s hard to even leave it to cool without wanting to just dig a spoon into the velvety loveliness. Yummy! If you do manage to leave them to cool then you will be left with a rich, gooey, delicious brownie that will leave everyone wanting more. If you’re being a little impatient, then you can expect warm, gooey, fudgey textured brownies. When we do this, we get a spoon each and I pour a generous helping of clotted cream on the top. It’s a very decadent way to end a meal, that’s for sure!
This recipe calls for my salted caramel sauce for everything which is so simple to make but if you’re running short on time, then I highly recommend the Halen Mon salted caramel sauce it’s a bit on the pricey side but it’s almost as good as home made. I strongly advise serving your brownies with a huge dollop of vanilla ice cream and a big spoonful of caramel sauce and peanut butter mixed together and warmed for a minute in the microwave to loosen it a little and make it a more sauce-like consistency.
The best bet for cooling your brownies is to leave them to cool in the tray. I use the silicone brownie pan from Lakeland as it has handy dividers so you can make one big brownie, 9 small ones or 3 extra long ones which means you don’t run the risk of squashing your brownies out of shape or cutting them too soon.
