I love a big cooked breakfast but it’s not always possible, especially on a school morning so we have to find a suitable alternative. Spicy sunshine scrambled eggs is perfect for hurried breakfasts as it’s ready in less than 5 minutes thanks to the microwave (or 10 if you need to use a pan!)
It contains all the things that you need from a breakfast. It’s got the obligatory pork product – sliced ham. When you’re in a hurry, bacon takes too long to cook and when you don’t have much time, it’s much easier to use a good quality smoked ham instead. It doesn’t quite have the bacon flavour but it will do! All good breakfasts have to have cheese. Spicy sunshine scrambled eggs need a tangy, sharp cheddar cheese or a Red Leicester if you’re not up to a mature cheese. To bring the spice, you need a chilli, you can always leave the seeds in if you want something really hot to wake up your mouth. The little sunshine spots of diced yellow pepper bring the happiness. I love chilli and peppers together. I like the way the flavours compliment each other and when you have them both combined with cheese and pig. Oh my! Delicious.
Spicy sunshine scrambled eggs is a firm school morning favourite. It’s a great source of protein and calcium and it’s a very tasty way to start your day. It’s Breakfast Week this week and I’m promoting how important it is that both kids and adults have a good start to their day. Breakfast doesn’t just bridge the gap until lunch time, it sets you up for the rest of the day. You should never skip breakfast, unless you’re having a brunch!
