I was challenged by Amoy recently to make a wonderful Winter warmer dish with an Asian feel to it using some of their products. We really love Chinese food and we use soy sauce in a lot of dishes but one of our family favourites is sticky soy chicken with noodles. The sticky soy chicken is really simple to make and goes really well with egg fried rice or noodles. It’s so easy to make and you really don’t need to be a whizz in the kitchen either. It’s ready to eat in about 15 minutes too so it’s perfect for a dinner in a hurry.
The moist chicken is marinated in soy sauce mixed with sugar which once cooked, caramelises and makes the chicken deliciously sticky. It makes a fabulous addition to a stir fry or if you chop the chicken into smaller chunks, it gives a wickedly good boost to a plain chicken fried rice or works well as an addition to a chow mien. I’m really getting back into noodles just lately. Misteright isn’t keen on them so we don’t eat them as a main meal often but I make this dish a lot and I was getting a bit bored of just having it with egg fried rice and stir fry veg. The end result was a fabulous meal which was scoffed by everyone. We didn’t even have any leftovers!
