I really love cranberry lime cupcakes. They are sweet, zingy and really rather pleasing to eat. Cranberry lime is a great flavour combination but I always break it out a bit more when the weather is colder. There is something about it that reminds me of warmer climes. Each time I take a bite, I’m back sipping cocktails in Miami. These cupcakes make a great addition to the Christmas food table too. They’re not too sweet and they can be just the thing to cut through the richness of eating during the Holidays.
You don’t just have to save these beauties for the Holiday season, they’re great at any time of year. I just associate cranberry lime cupcakes with Chrimbletide baking. I do like to put plenty of cupcakes in the hampers I make for gifts. Home made is always the best way to give a gift, especially if you’re good in the kitchen. They make great teacher gifts too and it doesn’t cost the earth to make a few batches that can be shared out in the staff room! Cranberry lime cupcakes are also great for a quick snack, as something bright and cheery to put on your Christmas table – or with a brew. Or two!
