Jaffa cakes, in Christmas flavours? Oh yes! These are a far cry from my epic Jaffa fail earlier in the year. I have been perfecting my methods and eventually, I decided against using jelly or quick Jel. Neither of them work particularly well in Jaffa cakes but thick, good quality jams and marmalades do! I’ve been using the new range of Christmas jams from Mackays. Available in both mulled wine and berry flavour and Orange and cranberry flavour. There both pretty chunky but with a bit of a whisk round, they become runny enough to top a Jaffa cake but not so runny that it all falls off when you cover them with chocolate. Jaffa cakes are a very serious business you know!
This time around, I seem to have cracked it and the end result was these yummy little cakey-biscuits. They are just like jaffa cakes and you could use this same recipe but with different flavours of jam and marmalade if you prefer but I’m feeling exceptionally Christmassy already so I’m sticking with the Christmas flavours until the holiday season has passed anyway! You can’t beat a bit of mulled wine flavours to warm up your day. These jaffa cakes should come with a warning though. I have made 4 batches of these this week alone and The Boy is already pestering me to make more. They don’t last very long, they taste too good and you can make 24 for about the same price as a double box of actual Jaffa cakes. Sorted!
