Breakfast, brunch, what ever time of the morning or early afternoon you eat on a weekend it has to be Breakfast Hash that you’re eating! It’s the ultimate in lazy food and has all the glories of your favourite fry up without the need to even put a pan on the stove! Yes, it’s a tray baked kind of breakfast food but it contains egg, bacon, sausage & potato. Everything you need for the perfect start to a cold Autumnal day. We have this most weekends throughout the cold season because it tastes delicious and requires hardly any effort at all. Don’t get me wrong, I love a good fry up but when you’re cooking for a lot of people or have exceptionally hungry troops, it can be stressful trying to get everyone fed at the same time without burning things. So, my solution was to chop it up small, chuck it on a baking tray and whack it in the oven. No fuss, hardly any mess and in under an hour, you can take out a tray of breakfast and put it on the table so everyone can help themselves. My weekend cooking really is that lazy! Why expend the effort if you truly don’t have to?
Breakfast hash can be served on it’s own, or you can add the usual mushrooms, tomatoes & beans if you can be bothered. I never can so we just eat it as it is. The end result is cripsy, fluffy potatoes that have soaked up the delicious bacon juices and taken on hints of green chilli & garlic which are combined with crispy smoked bacon. The gnarly chunks of sausage have just started to catch around the edges to take on a whole new flavour and crunch when you bite into them. All of this topped with whole eggs that are baked but taste fried!
