The two course meal challenge isn’t something that would come easy to everyone. Shopping on a budget doesn’t come easy to everyone so the idea of creating a fabulous 2 course meal on just £20 would have some people quaking in their boots. For me, £20 for 2 courses is very luxurious and so I will be pushing the boat out for this one! Amazing food doesn’t have to be expensive, it just needs to be cooked right and planned well! For the challenge, I decided to make a holiday favourite of ours. No matter where we go when we are self catering, I always cook these dishes as the things you need to make them are just basic kitchen items, nothing cheffy to see here!
Steak sandwich on ciabatta with forked new potatoes & rocket salad is a very simple dish that tastes amazing. It’s also loved by everyone who eats it (so long as they are not a veggie, obviously!) The steak can be cooked to perfection in just a few minutes on each side. Ciabatta bread is easily warmed in the oven and a salad doesn’t take long to prepare. For dessert, it’s de-constructed Eton mess which is just squished meringue nests on a plate with lots of seasonal berries (so it can be adapted to where ever you are in the world) and cream or vanilla ice cream! This whole meal costs roughly £18 from most Supermarkets and if you buy more new salad and new potatoes, you could stretch the main meal out to feed 4 instead of 2 which would still come in at less than the £20 budget. Sometimes, it’s cheaper to eat at home than it is to dine out.
