Strawberry omelette may sound disgusting to some but it’s delicious, even if it did come about a bit by accident. We eat French toast for breakfast at least once a week and I wasn’t paying very much attentition when I started this weeks batch. I only had 5 slices of bread. That was not enough to feed Misteright, The Boy and I. I wondered what to do as we were all still in our PJs and no one wanted to go to the shop in the rain to get more.
I decided to use the remaining egg mixture and see what would happen if I tried to turn it into an omelette. I wasn’t sure if it would work, or even if it would taste good so I asked The Boy to be a bit of a guinea pig before I put any of it in my mouth! It turned out well though and the end result was really brilliant. The omelette was soft and fluffy with hints of vanilla & cinnamon and the strawberry centre was just perfect. The strawberries were just starting to soften up so they melted in my mouth without even needing to chew. I’ve made this a couple more times since the weekend and it really is great. I like to have sweeter things for breakfast some days and this is perfect. It’s a delicious and nutritious way to start the day and it has strawberries in it too. What more could you need?
