Rainbow spaghetti is a great light lunch or a fabulous large meal to share with friends and family. Nothing is better than sitting around the table and digging in to a huge bowl of brightly coloured pasta and vegetables. It’s important to eat a rainbow at least once a day so this dish is perfect. It’s ready to eat in the time it takes for the pasta to cook so it’s really easy and very quick. It’s a great meal for busy evenings or hectic lunch breaks. I can make this recipe with the veg I have on the rack or in the fridge and it costs about £1 per person. That’s really great value for such a filling meal. This recipe can be slightly adapted to suit vegetarians – simply omit the meat from the ingredient list. You can also use Gluten Free pasta instead of regular spaghetti too. It really can be made to suit everyone.
