Lemon meringue pie has a nice flavour but it’s a bit boring. Misteright doesn’t like it very much either so when I fancy a taste of lemon meringue, I always make these cupcakes. They are really easy, because I am a cheat and I use a lemon meringue pie packet mix. The kind where you just add butter, eggs and water and you’re good to go. Packet mixes can always make a very simple cupcake be something totally different and they also take out a lot of work for a very fancy end result.
Crunchy lemon meringue swirl cupcakes are made from a plain sponge cake mix which has been swirled with the lemon from the packet mix and baked in the oven. Once baked, the cupcakes are topped with a meringue and baked again. Don’t worry about your cupcakes getting dry. The egg in the meringue forms a barrier and the cupcakes stay nice and moist underneath. The cupcakes are then topped with a small splodge of lemon and a generous sprinkling of crunchy biscuit crumbs. The lemon swirl in the cupcakes is really delicious and is complimented by the soft but chewy meringue and crunchy biscuit on the top. The finished cupcakes look brilliant and more importantly, they taste amazing.
