Toffee apple pie is like a banoffee pie, you see I love the idea of banoffee pie but I can’t eat bananas. I decided this weekend that I was finally going to attempt a similar sort of thing but with some delicious apples instead of yucky bananas. I had looked for a recipe like this online several times and all my searches came back with nothing. Am I the only person in the world who thought this would be a brilliant idea? Surely not?
It seems that I am the only person and this is how this recipe for toffee apple pie came about. I adapted a recipe and swapped the bananas which I loathe for juicy, sticky apple slices which were cooked a little bit in a splash of blueberry cider. Delicious and surprisingly simple. It is a very rich dessert though and is best shared amongst a large group of friends all armed with spoons. A little does certainly go a long way so I do suggest this to be more of a sweet treat rather than something you eat after a main meal. Puddings first and a small snack after, that’s my rule for this brilliant toffee apple pie. It is exceptionally delicious with a huge scoop of vanilla ice cream though. Misteright, The Boy and my Polish neighbours all fell in love with the toffee apple pie and it is a really good replacement for a banoffee pie. It takes roughly the same amount of time to make as a banoffee too and you don’t need amazing kitchen skills either.
