You say the word Funfetti in the UK and everyone looks at you a bit funny! Well, it’s a cake mix with sprinkles in by Pilsbury and it’s rather sad that we don’t have it over here. I love the stuff. It’s pretty, tasty and contains all the colours of the rainbow. Not to mention that you can add it to a whole host of recipes to create amazing treats with very little effort. So what do I do when I’m in my kitchen and I fancy a similar kind of treat? I make my own, of course!
Packet cake mix in the UK doesn’t really have a patch on anything that you get over in the USA. I mean even on 2 Broke Girls, they used packet mixes in their cupcake business and no one has noticed yet. The English ones don’t taste that good. So I’ve been trying to recreate the exact cakes that can be achieved with a box of Funfetti cake mix. Yes, it really is possible and with a few added extras, it tastes fabulous. A very easy way to show off your baking without needing loads of skill. It’s just a simple variation on a sponge cake batter with a few added extras thrown in. Oreo are a must in the middle of this cupcake just because they look amazing and hold their shape during the cooking process. They still look like Oreo and not like some soggy mush for the centre.
