Waffles with beer & bacon are not your usual Sunday morning brunch. In fact, I don’t think many people would plan on eating these delicious little things to start their day. They are tremendous and I do have a bit of a thing about waffles. They are delicious no matter what goes in the batter. This recipe is great for everyone and the beer batter is well flavoured and it’s a dairy free recipe too so if you can’t have milk, you can still have waffles. Even The Boy liked them, and I got Super Mum points for the beer being an ingredient. I didn’t tell him that the alcohol evaporates during cooking, I just let him think what he wanted to on that!
Waffles are always an amazing start to the day, especially when the plate of food involves some delicious crispy bacon and lashings of maple syrup. To be honest, first thing in a morning I can’t always be bothered to cook a full breakfast along with waffles so bacon waffles are a perfect solution. You can even cook the bacon the night before or sling it in the oven for a half hour, if you don’t mind waiting longer. I’m not a massive beer drinker either so I always end up with half a can left over. Perfect for waffle batter! The bubbles really add an extra element to the waffles and the crunchy bacon bits give a nice flavour that really compliments the beer batter.
