I love the weeks after Easter using up my left over creme eggs and making brownies! I’ve been pretty good this week and avoided most of the stupidly low priced left over chocolates from Easter that have been quickly flying off the shelves at 10p a bag. I did manage to grab a few packets though, OK, you got me. I spent £2 and bought all 20 bags that were left! Oh yes, mini creme eggs and mini caramel eggs at 10p a packet meant that I just had to bake some more brownies! I love caramel and creme eggs in brownies, the chocolate partially melts and the gooey centres manage to stay in tact. Delicious! I make mine into small bite sized pieces to make them last longer. It’s not often that these brownies actually make it to the fridge, we tend to dig in after we empty a pot of vanilla Haagen Daz over the top and break out the spoons and eat it straight from the tin.
If you can manage to leave the brownies in the fridge, I suggest you cut them with a bread knife for the best results.
