St Clements cake is a great bake for Easter weekend. It can also be a super indulgent one when you ice it with my amazing chocolate orange liqueur ganache. It takes it to a whole new level! I recently received a bottle of the most amazing chocolate orange with a difference from DemiJohn. It’s an amazing hand crafted liqueur from Devon and it tastes so delicious I had to use the last bit of the bottle for something creative. Think Irish cream liqueur but with a wonderful chocolate orange flavour. It’s been wonderful to drink but I’m not very tolerant of alcohol at the moment due to my medication so I needed something brilliant to create to make the most of the loveliness.
I’d not made a St Clements cake for ages. I love the citrus lemon and orange flavours, especially when they are smothered in chocolate ganache. That makes everything taste good. The ganache is simple to make and the cake is just a variation on a plain Victoria sponge batter. You can get busy and add lemon and orange zest if you want to but if you don’t have any then just a bit of extract will be fine.
