I love Mexican food but quesadillas are most definitely my favourite. They are essentially a Mexican toastie made from flour tortilla wraps with all the good stuff that you expect to find in Mexican food stuffed inside with grated cheese and then toasted on a griddle, a hotplate or in a frying pan. When I work on the food van in the Summer, this is my staple food along with sausages in a cup. It’s the meal that keeps me going and I don’t ever get bored of it. It is my ultimate Summer food. It’s great for camping or at festival (either from a street food van or made on a BBQ with some amazing tin foil skills!) It’s great for the kids, the grown ups. It can be spicy, or mild. It’s one of those great all rounder dishes that can be done in a few minutes and can feed a few people!
Quesedillas can be made with any type of tortilla wrap and can be adapted to suit allergies. They can even be made totally gluten free if that is how you need your food to be. I can’t rave about this recipe enough. We have this for lunch most weekends throughout the year and if you don’t fancy it with chicken, just use a spoon of home made chilli instead. You could always push the boat out and have a bit of both, or even a totally vegetarian one, just don’t skimp on the cheese. That’s the law!
