When I first wrote this recipe for chocolate marshmallow cornflake tray bake, I was still rather new to food blogging. Surprisingly, this post is now one of my most popular posts of all time! The way I make this has improved over time and I thought it was about time that the recipe it had a bit of a makeover to reflect that. I did make it even more fabulous after all! It’s gone from just chocolate to triple chocolate and given it a bit of extra marshmallow for the topping. The end result is pretty spectacular. It got the neighbours kids talking and was promptly polished off by them, The Boy and his friends. It is a minute adjustment for maximum taste. It’s great for sharing with the family or just for eating on your own. It’s coming up to Easter, that time of year where everyone has way too much chocolate and ends up spending the last week of the holidays baking some kind of chocolate treats to use it all up. Chocolate marshmallow cornflake tray bake is the ultimate treat for using up any left over chocolates, and those little marshmallows that come in the middle of little eggs. The kind that don’t quite taste as good as they should do but need eating up. This recipe is perfect. It’s really easy to make and can be eaten straight from the bowl, or if you can wait, then it’s fabulous cut into bite sized chunks which are perfect for little (and big) fingers! Kids can do this under supervision and older kids can be left to make it all on their own. It’s a wonderfully gooey treat. In our house, it rarely makes a tray bake as it’s all been eaten from the bowl before it’s even cooled.
