I did it! I’ve been saying to myself I must bake more interesting things to push my boundaries to the limit, and beyond. This weekend I did just that! I baked some amazing mint chocolate chip ice cream cone cakes. They are truly delicious and didn’t last very long at all. I love the wafer crunch instead of a regular bun case. You can top them with anything that you fancy to make them look a bit more like an ice cream and to suit all tastes. They’d be great with a flake in them too!
The mint chocolate chip ice cream cone cakes take longer to cook than usual cakes and they cook at a lower temperature to make sure that the cones do not burn. If you have 2 bowls for your food mixer then I suggest you use both, if not, transfer the fist mixture into a different bowl instead. This recipe is really simple considering the finished result looks so good. These ice cream inspired treats are great for any occasion but would go down a storm at any kind of party!
