If you’ve been a reader of my little bit of t’Interweb since way back when, you’ll know I’m on the review panel for Goodness Direct (one of my fave healthy food stuff websites!) I am sent stuff a couple of times a year and this time, the box was rather impressive! It was rammed full of jams and different types of honey including a raw nut honey, which to be fair, I had never even heard of. I headed straight to the kitchen to experiment with it. You all know by now exactly how much I love cake so it would have to be another adaptation on a basic sponge cake mix. It’s a good benchmark kitchen test is a cake mix. It’s a good indication of flavour, how well a product combines with other ingredients and how well it cooks. Raw nut honey & coffee cake is great for an afternoon snack or an elevenses treat. It goes perfectly with any hot drink for a deliciously indulgent treat.
The honey element does mean that this cake needs a little bit longer to cook than a plain sponge cake but the end result is really amazing. The honey sinks to the bottom of the cake mixture so it looks as though your cake has stripes on the bottom. Rather cool and quite science-ish. Great for showing little kids about floating and sinking.
