I love beef cobbler it’s a great meal for the cold weather and it is easy to prepare. I’m not even sure that this is really a cobbler but it was a recipe first shown to me by my Gran just after The Boy was born. It uses a scone top instead of a pastry crust or dumplings. It’s healthy and contains milk so when I was breastfeeding, I was trying to get as much calcium as possible. This recipe is a variation on the one that was originally shown to me. The scone recipe has been adapted to use goats milk instead of cows milk and it also has added extras for a better flavour. If you’re not into goats milk, you can always use cows butter instead.
I love a good beef cobbler and it’s really an all weather dish so it doesn’t matter if it’s boiling hot sun or pouring down rain. It’s easy to make and it doesn’t take very long to put the dish together. You can add any kind of vegetables that you would like and this dish also works with lamb, pork & chicken too. Just substitute the beef for whichever you prefer. My favourite is definately beef though. It reminds me of my Gran every time I make it. It’s even great to make some extra scone crust mixture as they are great made into small scones. They are amazing with cheese & pickle for a snack!
